Description

Boterkoek (buttercake) is a beloved classic Dutch recipe, often prepared in homes for guests.  It is somewhere between a tart and shortbread.  As the name suggests, buttercake has lots of butter and is traditionally almond flavoured.  It is typically served in small slices and would make a great seasonal brunch treat with a cup of coffee.  It freezes well, so you can keep the second cake for future special occasions or gift one to a friend or family member.
