This Christmas cake is full of healthy dried fruit and nuts (figs, dates, raisins, cranberries, apricots, pecans and almonds) held together with just enough eggs, brown sugar and flour to make it sliceable......and quite a lot of rum to make it extra Christmassy.  It is densely delicious and not your typical fruitcake. It will come nicely wrapped for gifting or storage.
